Rangalour gutire Patha manxor (Mutton with pumpkin seeds)

Ingredients
- Mutton: 500 gms
- Pumpkin seeds: 70 gms
- Chopped onion: 3 medium
- Garlic paste: 2 tsps
- Ginger paste: 2 tsps
- Cumin powder: 1 tsp
- Coriander powder: 1 tsp
- Mustard oil: 2 tbsps (to marinate)
- Mustard oil: 2 tbsps ( for cooking)
- Bay leaves:3
- Chilli powder: 1 level tsp
- Cardamom: 6
- Cinnamon: 1 and 1/2 inch long
- turmeric powder: 1 tsp
- Salt: to taste
- Sugar: 1 level tsp
- Water: 200 ml
Directions
- Make desired size pieces of the meat, wash and drain.
- Take the meat in a pressure cooker and add half of the chopped onion.
- Also add garlic and ginger paste, cumin and coriander powder.
- Add mustard oil, salt and 2 tbsps of mustard oil and mix well with hands.
- Close and let the meat marinate for an hour.
- Clean the pumpkin seeds and crush it in a grinder.
- Mix it with the water and keep coverd for about 20 minutes. Strain.
- Make a paste of the cardamom and cinnamon and keep it covered.
- Cook the meat for a whistle and reduce heat to minimum.
- After about 6 minutes switch off the gas.
- Heat 2 tbsps of oil in a karai.
- Fry the bay leaves and add the remaining chopped onion.
- When the onion is soft add the chilli powder and sugar.
- When brown add the hot meat and upon high heat fry till the meat is dry of water.
- Warm the srain pumpkin seed water and add it to the meat.
- Simmer till the meat is done.
- Add the cardamom and cinnamon paste.
- Taste for salt and cook covered upon low heat for 2 minutes.
- Serve warm with lucci or puri.
- Upon low heat cook covered for 2 minutes.
Notes: You can also dry fry the pumpkin seeds and crush.
