Baanhgajor Logot Gahori (Pork with Bamboo shoot)


  • Pork: 1 kg
  • Onions: 3 medium sized
  • Ginger: 1 ½ inch long
  • Garlic: 1 whole
  • Green chillies: 3
  • Turmeric powder: 1 tsp
  • Fermented bamboo shoot: 4 tbsps
  • Hot water: 500 ml
  • Salt: to taste


    • Clean and cut the pork into serving portions.
    • Peel the onions and wash. Chop the onions.
    • Peel and wash the ginger.
    • Peel and wash the garlic.
    • Make a paste of the ginger, garlic and red chillies.
    • Heat a heavy bottom pan and upon medium heat put the pork pieces and cover.
    • Cook stirring occasionally till the fat comes out and the meat turns brown.
    • Take the pork out of the pan and in the fat of the pork fry chopped onions, ginger, garlic and chilli paste.
    • When brown add turmeric powder, salt and pork. Fry for sometime.
    • Add the bamboo shoot. Stir for about five minutes.
    • Add the hot water and bring to boil.
    • Simmer covered upon low heat.
    • When the meat is done and the gravy thickens remove the pan from fire.
    • Serve hot with steamed rice.
