RIDGE GOURD MASH (Jika Pitika)

Ingredients

  • Ridge gourd: 2 (300 gm)
  • Mustard seed paste: 2 tsp
  • Mustard oil: 2 tbsp
  • Chopped onion: 1 tbsp
  • Chopped garlic: 1 tsp
  • Green and fresh pepper: 1 tsp
  • Salt: to taste

Directions

  1. - Peel the ridge gourd and boil with rice. - Drain and mash with a fork while warm. - Heat 1 tbsp of mustard oil in a pan. - Fry the chopped garlic, chopped chillies and fresh pepper for about 20 seconds upon medium heat. - Add the mustard paste and stir well. - Switch off the gas. - Add the mashed ridge gourd to the pan. - Add salt and mix well. - When cool add the chopped onion. - Take out in a bowl. - Garnish with the remaining mustard oil. - Decorate with green pepper. - Jika pitika is delicious to eat with boiled rice.
