Kothal Guti Aru Rangalou Aagor Khar (Pumpkin leaf and Jackfruit Seed Khar)

Ingredients

  • Jackfruit seeds: 20
  • Tender pumpkin leaves: 2 handfuls
  • Potato pieces: 1 medium
  • Mustard seed paste: 1 tbsp
  • Mustard oil: 2 tbsp
  • Fenugreek seeds: ½ level tsp
  • Chopped garlic: 2 tsp
  • Chopped onion: 1 medium
  • Ginger paste: 1 tsp
  • Slit green chillies: 4
  • Kola khar: 2 tsp
  • Salt: to taste
  • Sugar: ½ tsp
  • For garnishing: 1 tbsp mustard oil

Directions

  1. - Peel the jackfruit seeds and boil. - Wash the pumpkin leaves and break with hands. - Heat oil in a pressure cooker. - Temper with fenugreek seeds and fry the chopped garlic. - When red add the onion and slit green chillies. - When the onions are soft add the pumpkin leaves, potatoes and jackfruit seeds. - Stir for about ½ a minute and add the mustard paste, kola khar and hot water. - Add salt to taste and sugar. - Close and cook for 2 whistles. - Reduce heat and after 2 minutes switch off the gas. - When cool open cover. - Add mustard oil and ginger paste. Stir and cover. - After 2 minutes open cover and serve with rice.
